This is an easy omelet to make. I like making them during the week as they reheat nicely. I cut this in fourths and everyone can have a nice breakfast by placing it in the microwave to heat up. Use whatever veggies you have, bacon instead of ham or a different kind of cheese.

  1. In a large frying pan add 3 tablespoons of Olive Oil and toss in the peppers, onion, zucchini, mint, and oregano fry just until veggies have softened. I have in the past baked all the ingredients instead of frying but it takes too long for the veggies to soften.
  2. Beat eggs with milk, salt and pepper.
  3. Toss the cheese into the eggs mix and with a fork or spoon mix.
  4. Oil brush your pan before tossing in the veggies, and add in the egg mixture. Pop it in a pre-heated oven and bake at 180 degrees for 20 minutes and until golden brown. Kali Orexi!!!

The eggs and vegetables will release some liquid when thawed, so be sure to place the slices on paper towels in the refrigerator (or on a plate) to absorb this excess.
