Instructions to make Pineapple kesari:
  1. In a kadhai, add 4 tbsp of ghee and roast it for few minutes. Then transfer it to a plate and keep it aside. Then in the same kadhai add the cashew nuts, raisins and roast it for few minutes.
  2. Add half cup of water to half cup pineapple pieces and cook it till it becomes soft.
  3. Let it cool down then grind it to a fine puree. Heat some ghee and add cloves and add the other half finely chopped pineapple and cook it for some time then add the pineapple paste and cook it for 2 more mins. Pour two cups of water and bring to a boil.
  4. When it is boiling add the rawa and stir continuously till the rawa becomes thick and becomes soft. Now add sugar and pineapple puree and stir continuously.
  5. Make sure there is no lumps. Add few drops of kesari or yellow colour and mix well. Add ghee now.
  6. Kesari will start leaving it's sides of the vessel. Now add cardamom powder, fried cashew nuts and raisins and mix well. Now transfer it to plate and serve it.

The Kesari Bhath is a must during weddings for breakfast and is usually served along with Khara bhath (upma). It is simple to make and taste delicious.
