  1. Take 2 cups ripe pineapple (washed, peeled & chopped in cubes

  16. Take 1/4 tsp fenugreek seeds
  17. Take 1 tsp mustard seeds
  18. Prepare 1/2 cup freshly grated coconut
  19. Take Tempering ingredients:-
  20. Get 1 tsp coconut oil
  21. Get 1 tsp mustard seeds
  22. Prepare 1 sprig curry leaves
  23. Prepare 1/4 tsp asafoetida

Pineapple gojju or menaskai, an authentic curry from Udupi goes perfectly well with rice. Trust me a big vessel full of menaskai gets cleared off in no time. Pineapple is one such fruit that has both sweet and tang taste, and is ideal for making gojju. The bites of fruit cook too early and all you have to make is a masala from scratch.

Instructions to make Pineapple gojju:
  1. Heat a wide pan,add 3cups of water and add the pineapple cubes, turmeric,curry leaves, Jaggery and salt. Cook on slow flame until the pineapple becomes soft.
  2. In another pan,dry roast all the ingredients as mentioned above on low flame..until it turns to light brown…when done,switch off the flame and keep aside to cool.
  3. When cooled,make a fine paste by adding water to it.
  4. Once pineapple is cooked,add the ground masala over the pineapple and adjust the consistency by adding water and bring it to boil.
  5. Finally,heat up a tadka pan,add the tempering ingredients to it and pour this tadka over the pineapple gojju/curry
  6. Pineapple gojju or ananas menaskai is ready to serve.
  7. Accompanied by hot steaming rice..
  8. Note- This gojju is medium thick in consistency and you do not need any side dish with it…you can just have it wdh steam rice… that's a soulfood too.
